Southern Peach Salad with Green Goddess Dressing

A delicious and easy peach salad with avocado and a flavor packed green goddess dressing.

Ingredients

Servings

For the Salad:

  • 4-6 cups salad greens mixed
  • 1 cup peach sliced fresh
  • 1 avocado pitted, peeled, diced
  • 3 ounces blue cheese crumbled, feta or goat cheese would also work well
  • ½ cup pecans chopped, toasted

For the Dressing:

  • 1 clove garlic grated or pressed
  • 3 Tablespoons anchovy minced or 3 T. anchovy paste, optional
  • 3 Tablespoons chive minced
  • 1 cup mayonnaise
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon lemon juice
  • ½ cup sour cream
  • 1/3 cup parsley minced
  • ¼ teaspoon salt
  • black pepper dash

Instructions

  1. For the dressing: place all ingredients in a blender and combine. Chill until ready to use.
  2. In a large bowl, combine salad greens, peaches, avocado, blue cheese, and pecans. Toss salad with desired amount of dressing and serve immediately.
