Description
Southern Peach Sweet Tea starts with a peach simple syrup created by simmering chopped fresh peaches in water, sugar, and lemon juice. This syrup captures fresh peach flavor and natural sweetness. Meanwhile, black tea bags steep in boiling water to produce a strong tea base.
After steeping, the tea is combined with the peach syrup, adjusting sweetness by adding more syrup if desired. A pinch of baking soda counteracts any bitterness resulting from over-steeping. The tea is cooled either chilled in the refrigerator or poured over ice for immediate serving.
The finished drink is garnished with sliced peaches and mint sprigs, adding aroma and a fresh look. This peach-infused sweet tea evokes Southern summertime traditions and provides a fruit-accented alternative to plain sweet tea.
Ingredients
Peach Simple Syrup
- 3 peach chopped, fresh
- 3 cups cane sugar
- 3 cups water
- 1 tsp lemon juice
Black Tea
- 4 black tea bags family size; Lipton or Luzianne brands preferred
- 8 cups water
- 1 pinch baking soda
- peach for garnish, sliced
- mint for garnish, sprigs
Instructions
Make the Peach Simple Syrup
- Put the chopped peaches, water, lemon juice, and sugar in a saucepan over medium heat. Bring to a gentle simmer and let simmer for 15 minutes. (While this is going, start boiling the water for the tea).
- Strain the syrup through a mesh strainer into a heat-safe container. Discard the chopped peaches.
Make the Tea
- Bring the water to a rolling boil on high heat in a large pot.
- Once at a rolling boil, turn the heat off and add the tea bags, keeping the strings over the sides to remove them easily. Let steep for 15 minutes before removing the tea bags.
Make the Peach Sweet Tea
- Pour half of the simple syrup into the tea, stir, and give it a taste (some people like it more sweet and some don't). Add all of the syrup, if needed. Add the baking soda if the tea tastes bitter or sour, which can happen if you over-steep the tea.
- Pour the tea into a heat-safe pitcher and cool in the fridge OR pour the tea into individual glasses over ice and serve with sprigs of mint and slices of fresh peaches.
