Southern Squash Casserole
Description
Southern Squash Casserole is a baked vegetable dish featuring sliced yellow squash and chopped onion cooked until tender in butter and seasoned with salt, pepper, and optional cayenne for a mild kick. The cooked vegetables are mixed with eggs, shredded cheddar and pepper jack cheeses, and sour cream, creating a creamy, flavorful base. This mixture is poured into a casserole dish and topped with crushed buttery crackers drizzled with melted butter, which form a crisp, golden topping as it bakes at 350ºF. The casserole is baked 30 to 40 minutes until the top is lightly browned and the filling is set.
The casserole offers a balance of textures from the soft squash filling and crunchy cracker topping, along with a mild spice note when cayenne is included. It is ideal as a side dish for Southern-inspired dinners or meals featuring meat or poultry.
No additional practical tips are provided, but the recipe indicates cooking the vegetables until tender and baking until the top lightly browns to signal doneness.
