  • 1 teaspoon chicken bouillon or 1 cube
  • 1 teaspoon salt

Instructions

  1. In a large pot, combine the greens, bacon fat, chicken bouillon, salt, and water (see notes)
  2. Bring to a boil and then reduce to a simmer.
  3. Cover and cook for 45 minutes or until the greens are tender. Check the water level during cooking and add more if needed.
  4. Taste and add additional salt if needed.

Notes

  • Use enough water to cover the greens by about one inch once wilted, starting with roughly 2 quarts and adjusting as needed.
  • Cool cooked greens completely before storing in an airtight container.
  • Store in the refrigerator for up to 3 days or freeze for up to 3 months.
  • Reheat gently on the stovetop over low heat or in the microwave to preserve texture.
