Southern Turnip Greens
Description
Southern Turnip Greens emphasizes the use of fresh turnip greens combined with bacon fat for richness and chicken bouillon to add a subtle depth of flavor. The greens are simmered in water until tender, typically for 45 minutes, allowing the flavors to meld and the greens to soften thoroughly. The dish brings a gentle, hearty taste with a smooth leaf texture resulting from slow simmering.
The cooking method includes covering the pot and adjusting water as needed, ensuring they do not dry out or burn. These greens serve as a classic, comforting accompaniment to many main courses, especially in traditional Southern meals.
The recipe notes suggest starting with about 2 quarts of water to cover the greens after wilting, indicating some adjusting during cooking. Cooling the greens fully before storage helps maintain their texture and flavor. They can be refrigerated up to three days or frozen for three months, with easy reheating on the stovetop or microwave.
Ingredients
- 2 pounds turnip greens cleaned, cut, and washed, fresh
- water (see notes)
- 1 tablespoon bacon fat
- 1 teaspoon chicken bouillon or 1 cube
- 1 teaspoon salt
Instructions
- In a large pot, combine the greens, bacon fat, chicken bouillon, salt, and water (see notes)
- Bring to a boil and then reduce to a simmer.
- Cover and cook for 45 minutes or until the greens are tender. Check the water level during cooking and add more if needed.
- Taste and add additional salt if needed.
Notes
- Use enough water to cover the greens by about one inch once wilted, starting with roughly 2 quarts and adjusting as needed.
- Cool cooked greens completely before storing in an airtight container.
- Store in the refrigerator for up to 3 days or freeze for up to 3 months.
- Reheat gently on the stovetop over low heat or in the microwave to preserve texture.
