Ingredients

  • 2 avocado
  • 1 corn grilled or 1 cup frozen corn, on the cob
  • 1 red bell pepper diced
  • 1 cup black beans rinsed and drained, canned
  • ½ cup Roma tomato or cherry tomatoes halved, diced
  • ¼ cup cilantro chopped, fresh
  • 1 jalapeño seeded and diced
  • ¼ cup red onion diced
  • ¼ cup cotija cheese or feta cheese, crumbled
  • ½ cup tortilla strips optional, crispy

Dressing

  • 2 tablespoons lime juice divided use, fresh
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. To make the dressing, combine 1 tablespoon lime juice with olive oil, chili powder, cumin and salt & pepper to taste.
  2. Cut avocados in half, remove the pit and dice. Toss with 2 teaspoons remaining lime juice.
  3. Place remaining ingredients in a bowl except for the cheese and tortilla strips. Drizzle with dressing and toss.
  4. Top with cheese & tortilla strips and serve.

Notes

  • The nutritional information excludes the optional cotija cheese and tortilla strips; adjust accordingly if using.
