Southwest Avocado Salad
Description
The salad features diced avocado tossed with fresh lime juice to maintain color and add brightness. Corn, whether grilled fresh or thawed from frozen, adds a smoky sweetness alongside diced red bell pepper and tomatoes for freshness. Black beans contribute protein and a creamy texture contrast, while red onion and jalapeño add bite and mild heat. Fresh cilantro adds herby brightness.
The dressing blends olive oil with lime juice, chili powder, cumin, salt, and pepper, enhancing the southwestern flavor profile. This dressing coats the salad ingredients lightly, balancing the creamy avocado and hearty beans. Cotija cheese adds a salty crumbly texture that complements the creamy and crunchy components.
For added texture and flavor, crispy tortilla strips can be sprinkled on top just before serving, contributing a pleasant crunch. The salad works well as a light lunch or side dish.
Ingredients
- 2 avocado
- 1 corn grilled or 1 cup frozen corn, on the cob
- 1 red bell pepper diced
- 1 cup black beans rinsed and drained, canned
- ½ cup Roma tomato or cherry tomatoes halved, diced
- ¼ cup cilantro chopped, fresh
- 1 jalapeño seeded and diced
- ¼ cup red onion diced
- ¼ cup cotija cheese or feta cheese, crumbled
- ½ cup tortilla strips optional, crispy
Dressing
- 2 tablespoons lime juice divided use, fresh
- ¼ teaspoon chili powder
- ¼ teaspoon cumin
- 2 tablespoons olive oil
- salt to taste
- black pepper to taste
Instructions
- To make the dressing, combine 1 tablespoon lime juice with olive oil, chili powder, cumin and salt & pepper to taste.
- Cut avocados in half, remove the pit and dice. Toss with 2 teaspoons remaining lime juice.
- Place remaining ingredients in a bowl except for the cheese and tortilla strips. Drizzle with dressing and toss.
- Top with cheese & tortilla strips and serve.
Notes
