For the avocado salad

  • 2 avocado medium-sized
  • 1 cup black beans canned, drained and washed
  • 1 cup corn frozen, thawed
  • 1 cup orange bell pepper diced
  • 1 cup cherry tomato halved
  • 1/3 cup red onion diced
  • 1 tbsp jalapeño chopped
  • 2 tbsp cilantro chopped
  • 2 tbsp feta cheese

For the lemon dressing

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp garlic minced
  • 1/2 tsp black pepper ground
  • 1/2 tsp salt
  • 1/4 tsp cumin ground

Instructions

  1. Prepare the lemon vinaigrette by combining the ingredients mentioned for dressing in a bowl and mix it with a fork or whisk and set aside.
  2. Remove the seeds and dice the avocados; add it to a large bowl along with the black beans, corn, bell pepper, tomatoes, red onions, jalapenos and cilantro.
  3. Pour the prepared dressing over the salad and toss to combine.
  4. Add the feta cheese and transfer the salad to a bowl and serve.
