Southwest Chicken Wrap

This Southwest Chicken Wrap with cream cheese and black beans is a delicious weeknight dinner or easy lunch idea! It's quick to make and filled with bold flavor.

Ingredients

  • 1 Tbsp. olive oil
  • 3 cups chicken shredded, cooked
  • 1/2 tsp. cumin ground
  • 1 1/2 tsp. chili powder
  • 1 tsp. onion powder
  • 1/8 tsp. cayenne pepper
  • 1/2 Tbsp. garlic minced
  • 1 jalapeño seeded and finely chopped
  • 1 red bell pepper diced
  • 1 cup corn thawed, frozen
  • 1 ounce black beans drained and rinsed, canned
  • 1 cup sour cream
  • 4 oz. cream cheese softened and cubed
  • 1 Tbsp. lime juice
  • 1 cup cheddar cheese shredded
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro chopped, fresh
  • 6 to 8 large wraps or tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken, cumin, chili powder, onion powder, minced garlic, and peppers, and cook for 5 minutes; until the pepper are tender.
  3. Stir in corn, beans, sour cream, and lime juice.
  4. Cook until cream cheese is melted, stirring continuously.
  5. Remove from heat. Stir in cheese, green onions, and cilantro.
  6. Evenly divide mixture between each wrap and roll up tightly.
  7. Serve immediately and enjoy!
