- 14 oz can reduced sodium black beans drained and rinsed
- 2 TBS Canned Fire Roasted Green Chilies found in the ethnic section
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- ¼ teaspoon salt
- 1 teaspoon olive oil
- 1 small tomato diced
- 1 small red onion diced
- ½ cup frozen corn kernels
- ½ cup monterrey jack cheese, grates
- ½ cup cheddar cheese, grated
- 1 handful cilantro, chopped
- 3 talks green onion, chopped
- 2 TBS light sour cream or Greek yogurt
- 1 TBS lime juice
