Southwest Pork Tenderloin

This Southwest Pork Tenderloin recipe features pork rubbed with canola oil and taco seasoning, then baked to a safe internal temperature of 145°F. The seasoning adds a Southwestern spice profile, while baking on a rack ensures even cooking. Resting the meat after cooking preserves juices and makes it easier to slice, resulting in tender, flavorful pork suitable for a main dish.

Description

Southwest Pork Tenderloin is prepared by coating pork tenderloins with oil and seasonings drawn from a taco mix. The use of canola oil helps the seasoning adhere and assists in browning during baking. Using a baking rack in a shallow pan allows air circulation for even cooking and prevents the meat from sitting in its own juices.

The oven temperature of 400°F cooks the tenderloin relatively quickly, finishing when the internal temperature reaches 145°F, ensuring the meat is safe to eat while remaining moist. Resting the meat tented with foil for 10 minutes redistributes juices throughout the pork, preventing dryness once sliced.

This pork tenderloin can be served sliced alongside typical Southwestern or Tex-Mex sides such as rice, beans, or roasted vegetables. It offers a straightforward way to apply a well-known seasoning blend to a lean cut of pork, yielding a convenient meal option.
