Southwest Skillet Chicken And Rice

Southwest Skillet Chicken and Rice is a one-pan dish combining cubed chicken breast, chopped onion and green pepper, corn, salsa, and chicken stock with long grain rice cooked together until tender. It is topped with shredded cheese and sliced green onions for added flavor and texture.

Description

This recipe begins by browning seasoned cubed chicken in olive oil, which seals in juices and develops a flavorful base. Chopped onions and green peppers are added and cooked until softened, providing sweetness and color. The mixture is then combined with chicken stock and salsa, which add moisture and a southwestern flavor profile. Uncooked long grain rice is stirred in, and the skillet is covered and simmered on low heat until the rice absorbs the liquid and becomes tender.

Once cooked, corn is stirred in along with shredded cheese and green onions, which melt and provide a creamy texture and fresh element. The dish is cooked entirely in one pan, minimizing preparation and cleanup. The balance of ingredients delivers a hearty, flavorful meal with varying textures from tender chicken, soft vegetables, and melty cheese.

This skillet meal works well as a main dish for lunch or dinner and can be adjusted with different types of salsa or added spices as preferred.
