Ingredients

  • 2 naan bread
  • 15 ounce refried beans nonfat vegetarian, canned
  • 4 chipotle chilis in adobo sauce
  • 4 ounces cream cheese softened, ⅓ less fat
  • cups black beans rinsed and drained
  • ½ cup corn frozen
  • cup diced tomatoes fresh or canned
  • cup pepper jack cheese shredded
  • 3 green onions chopped
  • ¼ cup Greek yogurt nonfat
  • 1 lime juiced and juice set aside

Notes

  • There will be some creamy bean spread leftover, use it for chips or dipping later - so tasty!
  • You can easily double this recipe, for 4 flatbreads.
  • This recipe also keeps well. I made it in the early afternoon and then pop back in the oven for a few minutes at dinner time. Perfect!
