Soy Ginger Steak Bites
Description
The steak is cut into bite-sized pieces and marinated to evenly coat with the soy-ginger marinade. After marinating for 30 minutes up to 2 hours, excess marinade is drained off to allow the meat to sear properly rather than steam.
In a hot skillet with vegetable oil, the steak is cooked in a single layer, allowing a crust to form on one side before stirring and finishing the cooking quickly to retain tenderness. The steaks are then tossed with butter off the heat to add richness and gloss.
This technique emphasizes the blend of sweet brown sugar, pungent garlic and ginger, salty soy, and a touch of heat from red pepper flakes, balancing flavor and texture in every bite. Optionally, garnishes like sesame seeds and green onions can be added for color and mild crunch.
Cooking steak bites in batches avoids overcrowding the pan and ensures a proper sear. Serve immediately to enjoy warm, tender pieces with caramelized edges.
Ingredients
- 1 ½ pounds steak sirloin, strip loin, or ribeye
- 1 tablespoon vegetable oil
- 1 tablespoon butter
Marinade
- 3 cloves garlic minced
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 2 teaspoons ginger fresh, minced
- 1 tablespoon vegetable oil
- 1 teaspoon lemon juice fresh
- ½ teaspoon red pepper flakes
Instructions
- Combine marinade ingredients. Cut steak into bite sized pieces and add to marinade.
- Refrigerate 30 minutes or up to 2 hours. Remove from marinade allowing excess to drip off. (Discard remaining marinade).
- Preheat a large skillet over medium-high heat. Add 1 tablespoon vegetable oil.
- Add steak in a single layer and cook 2-3 minutes without stirring to get a crust on one side. Stir and cook 1 minute more. Do not overcook.
- Remove from heat, toss with butter. Garnish with sesame seeds and green onions if desired. Serve immediately
Notes
- Allow excess marinade to drip off steak pieces to achieve a good crust during cooking.
- Cook steak bites in batches if necessary, as overcrowding the pan prevents proper searing and browning.
