Spaghetti Arrabbiata
Description
The recipe begins by cooking spaghetti until al dente in salted water, then preparing the sauce by sautéing onions until translucent and briefly cooking minced garlic. Whole peeled tomatoes, fresh basil, crushed chili flakes, dried oregano, salt, and black pepper are added and simmered for about 20 minutes. The tomatoes are mashed to a desirable consistency, creating a thick, flavorful sauce.
Once the sauce has thickened, freshly grated Parmesan cheese is stirred in to melt and enrich the sauce. The cooked spaghetti is then tossed with the sauce to coat each strand evenly.
Spaghetti Arrabbiata combines the heat from chili flakes with the sweetness of tomato and the earthiness of herbs, resulting in a well-rounded vibrant pasta dish. It can be served simply garnished with additional Parmesan.
Leftovers store well in the refrigerator for up to four days or can be frozen for longer storage, making it convenient for future meals.
Ingredients
- 8 ounces spaghetti pasta
- 1 tablespoon extra virgin olive oil
- 1/2 white onion
- 3 cloves garlic minced
- 28 ounces whole peeled tomatoes
- 1/4 cup basil roughly chopped, fresh
- 2-3 teaspoons red chili flakes crushed
- 1 teaspoon oregano dried
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper ground
- 1/2 cup Parmesan Cheese freshly grated
Instructions
- Bring a large pot of salted water to a boil, cook the spaghetti according to the package instructions until al dente, drain and set aside.
- While the pasta is boiling, heat olive oil in a large pan over medium heat. Add the onions and sauté until translucent, about 4 minutes.
- Add the garlic and cook for 30 seconds, until fragrant.
- Mix in the tomato, basil, red chili flakes, oregano, salt and pepper and sauté for 5 minutes then use a potato masher to mash down the tomato chunks as much as possible.
- Bring the sauce to a simmer and cook for 20 minutes or until the desired consistency is reached.
- Stir in the Parmesan until it is fully melted then add the spaghetti and toss until all of the pasta is fully coated.
- Serve with freshly grated Parmesan cheese, if desired.
Notes
- Store leftover pasta with sauce in an airtight container in the refrigerator for up to 4 days.
- For longer storage, freeze leftovers in freezer-safe containers for up to 3 months.
