Spaghetti Cakes
Description
The recipe begins by cutting cold cooked spaghetti into smaller pieces to help the mixture bind with the added eggs, cheese, olives, and capers. These ingredients provide moisture, salty tang, and richness. The batter is portioned into flat cakes that cook in a lightly oiled sauté pan until browned evenly on each side, producing a crispy surface while keeping the inside tender from the pasta.
Marinara sauce served alongside adds acidity and freshness, complementing the salty, savory flavors of the cakes. Serving these as appetizers or a snack takes advantage of leftover pasta and turns it into a new textured dish.
Tips include using kitchen scissors for cutting noodles to speed preparation and working in batches to avoid overcrowding the pan, which ensures proper crisping. Using cooled spaghetti helps the cakes hold together better during cooking.
Ingredients
- 2 cups spaghetti cooled for best results, cooked
- 1/3 cup marinara sauce
- 3 egg large
- 1/4 cup capers
- 1/2 cup black olives or green olives, sliced
- 1/3 cup Parmesan Cheese or mozzarella cheese
- olive oil (for sautéing)
- marinara sauce room temperature or warmed for dipping
Instructions
- Place spaghetti in a bowl and cut into 1/4-1/2 inch pieces using scissors.
- Toss cut pasta with remaining ingredients until completely coated.
- Heat a large sauté pan over medium/high and add a thin layer of oil.
- Using a large ice cream scoop or 1/4 cup measuring cup place mixture into sauté pan and flatten slightly to form a 1/2-1 inch thick disk.
- Cook cakes for 4 minutes on each side or until golden.
- Serve with marinara sauce.
Notes
- Chill cooked spaghetti before making cakes to help the mixture hold shape better.
- Use kitchen scissors to quickly and evenly cut the noodles into smaller pieces.
- Cook cakes in batches to prevent overcrowding and ensure even browning and crisping.
