Spaghetti Cakes

Spaghetti Cakes transform cooked and cooled spaghetti into crispy, handheld cakes mixed with eggs, cheese, olives, and capers. The mixture is formed into disks and pan-fried until golden on both sides, creating a contrasting crisp exterior and soft interior. Served with marinara sauce, these cakes offer a savory way to repurpose leftover spaghetti into a textured, flavorful dish.

Description

The recipe begins by cutting cold cooked spaghetti into smaller pieces to help the mixture bind with the added eggs, cheese, olives, and capers. These ingredients provide moisture, salty tang, and richness. The batter is portioned into flat cakes that cook in a lightly oiled sauté pan until browned evenly on each side, producing a crispy surface while keeping the inside tender from the pasta.

Marinara sauce served alongside adds acidity and freshness, complementing the salty, savory flavors of the cakes. Serving these as appetizers or a snack takes advantage of leftover pasta and turns it into a new textured dish.

Tips include using kitchen scissors for cutting noodles to speed preparation and working in batches to avoid overcrowding the pan, which ensures proper crisping. Using cooled spaghetti helps the cakes hold together better during cooking.
