Spaghetti Squash Casserole

This casserole uses cooked spaghetti squash strands combined with seasoned ground beef and a tomato-based sauce, topped generously with mozzarella cheese. Baking the assembled dish melts the cheese into a bubbly golden crust, complementing the tender squash and savory meat mixture. The casserole offers a comforting twist on traditional pasta dishes using vegetable strands instead of noodles.

Description

The Spaghetti Squash Casserole starts with tender spaghetti squash cooked until strands can be scraped out easily. Ground beef is sautéed with onion and garlic until browned, then simmered with diced tomatoes, tomato paste, marinara sauce, and Italian seasoning to create a flavorful meat sauce. The cooked squash strands are stirred into the sauce and transferred to a baking dish or back into the squash shells.

The dish is topped with shredded mozzarella cheese and baked until the cheese melts to a golden, bubbly finish. This combination delivers a mix of textures: the soft, slightly chewy squash strands and the rich, meaty tomato sauce topped with a melted cheese layer. The casserole resembles a baked pasta dish but uses a vegetable base.

Serve warm as a main course, providing a flavorful and hearty meal. This option is suited for those looking to replace traditional pasta with a vegetable alternative while keeping classic Italian flavors intact.

The spaghetti squash can be cooked either in the oven or the microwave, allowing flexibility depending on time and equipment. Ensure the squash is fully cooked so the strands pull out easily and blend well with the sauce.
