Spam Fried Rice Recipe

Ingredients

  • 2 tablespoons neutral cooking oil divided, generic cooking oil
  • 2 egg beaten and lightly salted
  • 340 grams Spam canned meat diced, 11.99 ounces
  • 1 teaspoon garlic minced
  • 3 cups basmati rice day old cooked, 360 grams
  • 50 grams frozen green peas defrosted
  • ½ cup green onions finely chopped, aka spring onions, 50 grams
  • salt to taste

Instructions

  1. Heat a wok or deep frying pan over high heat, add 1 tablespoon of cooking oil and pour in the beaten eggs. Scramble the eggs. Remove the eggs once cooked and set aside.
  2. Add another 1 tablespoon of cooking oil to the wok. Add the diced spam to the wok. (see note 1). Cook the spam until it is golden brown, this could take 4 to 5 minutes.
  3. Add the minced garlic, and mix through for 1 to 2 minutes.
  4. Place the cooked basmati rice in the wok and mix through. Break up the rice if it is clumped together. Stir fry the rice for about 4 to 5 minutes.
  5. Add the green peas, green onions, and eggs to the rice mixture. Mix until well combined. Turn off heat. Season with salt. Serve.

Notes

  • Be careful when you add the spam as it can splatter. Slowly add it to the wok.
