Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup onion chopped
  • 1/2 cup red bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed tomatoes
  • 4 egg large
  • 1/4 cup parsley chopped, fresh

Instructions

  1. Preheat the oven to 375°F. In a large oven-safe skillet, heat the olive oil over medium heat. Add the onion and bell pepper, sautéing until softened, about 5 minutes.
  2. Stir in the garlic, smoked paprika, salt, and black pepper, cooking for another minute until fragrant. Pour in the crushed tomatoes and bring to a simmer.
  3. Make four wells in the tomato mixture and crack an egg into each well. Transfer the skillet to the oven and bake for 10-12 minutes, or until the egg whites are set but the yolks are still runny.
  4. Remove from the oven, sprinkle with fresh parsley, and serve hot.
