Spanish Fish Stew
Description
This Spanish Fish Stew combines fresh seafood with a medley of vegetables and spices layered from softened onions, garlic, carrots, and celery to infused paprika, cayenne, fennel seeds, and thyme. Potatoes simmer until tender alongside diced tomatoes and a bay leaf, creating a hearty broth.
Cod and shrimp are gently cooked on top until just done, preserving their texture and flavor. The stirring in of fresh lemon juice and zest adds brightness and balances the spice, while parsley adds herbaceous notes.
The resulting stew is warm and flavorful with a mix of tender fish, firm shrimp, and soft potatoes in a tomato-spiced broth. It is well suited for a filling meal, especially served with lemon wedges and crusty bread to soak up the broth.
Ingredients
- 1 tablespoon olive oil
- 3 onion thinly sliced
- 2 garlic minced, cloves
- 2 carrot diced
- 2 celery diced, stalks
- 1 teaspoon thyme fresh or dried leaves
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon fennel seeds
- 14 oz diced tomatoes canned
- 2 russet potato peeled and cut into 2" cubes
- 1 lb cod fillet fresh or frozen and defrosted
- 1 lb Shrimp
- 1 bay leaf
- 1 lemon juice and zest
- ¼ cup parsley chopped, fresh
Instructions
- In a large skillet with a lid, heat oil over medium heat
- Add onions, garlic, carrots, celery, thyme, paprika, fennel, and cayenne
- Cook stirring until onions are softened, and spices are fragrant about 5 minutes
- Add diced tomatoes, and their liquid to the pan along with the potatoes, and bay leaf. Turn heat to medium-high, cover pan and allow to cook until potatoes are tender about 15 minutes.
- Add cod, and scatter shrimp over top. Cover and cook for 2 minutes more or until shrimp are pink and cod flakes with a fork.
- Stir in lemon juice and zest, and parsley
- Serve hot
Notes
- Serve the stew with lemon wedges to add extra brightness at the table.
- Crusty bread pairs well to soak up the flavorful broth.
