Sparkling Pink Lemonade
Description
Sparkling Pink Lemonade uses a ginger syrup made by gently simmering fresh sliced ginger with water and sugar until the ginger flavor is pronounced but not boiled away. The syrup cools as berries are pureed and strained to remove seeds, ensuring a smooth drink texture. Lemon juice and the strained berry puree are then mixed with the syrup and topped with club soda to create effervescence and lighten the drink.
The lemonade offers a harmonious blend of sweet and tart with a subtle warmth from the ginger. The use of fresh citrus and berries highlights natural fruit flavors, while the bubbles add a crisp, lively mouthfeel. Garnishes such as lemon slices, mint sprigs, and whole berries enhance visual appeal and add fresh aroma.
It is best served over ice to maintain chill and refreshment. The recipe includes tips for maintaining bubbles by storing leftovers in a covered pitcher to prevent soda from going flat. Alternative approaches mentioned include using berry-infused syrup instead of puree for a clearer lemonade, and variations with different fruits or added spirits to suit various preferences.
Choosing ripe lemons improves sweetness and reduces sourness, and frozen lemonade ice cubes help keep the drink cold without dilution. The ginger syrup preparation is crucial for controlling the spice level and should be simmered, not boiled, for best flavor extraction.
Ingredients
- ½ lb strawberries washed
- 6 ounces raspberry washed
- 1 cup lemon juice
- 1 liter club soda
- lemon garnish, lemon slices, mint sprigs, fresh berries
- mint
- Berry
Ginger Syrup:
- 1 (3-4 inches) ginger peeled and sliced, fresh
- 2 cups water
- 2 cups granulated sugar
Instructions
- In a medium sized saucepan over medium heat, add ginger, water and sugar, and stir well. Allow the water to come to a simmer at most, never to a boil, and simmer for about 15-20 minutes, or until ginger flavor is as strong as you like. Let cool as you make the rest of the lemonade.
- Puree the strawberries and raspberries in a blender or in a bowl with an immersion blender, then strain them through a mesh sieve. Set aside.
- Pour in the lemon juice, strained berries, and half of the simple syrup into a pitcher. Pour the club soda over the lemonade mixture and stir well. Taste, and add more of the simple syrup if more sweetness is needed.
- Cover the pitcher with a lid or tightly with plastic wrap until ready to serve.
- Serve over ice and garnish with fresh berries, lemon slices, and mint sprigs.
Notes
- Store leftover lemonade in a covered pitcher to retain carbonation for up to 3 days in the fridge.
- Use ripe lemons for naturally sweeter juice; avoid shelf-stable lemon juice which can be overly sour.
- Freeze lemonade into ice cubes to chill drinks without diluting flavor.
- For clear lemonade, infuse berries into the ginger syrup instead of blending and straining the berry puree.
- Variations include swapping fruits or adding alcoholic ingredients such as vodka or rosé wine to create cocktails.
