Sparkling Water Pancakes

Sparkling Water Pancakes are made by combining dry ingredients with a batter of buttermilk, eggs, melted butter, vanilla, and sparkling water. The recipe uses carbonated water to add lightness to the batter, producing pancakes with a tender crumb and gentle rise. Cooking on a griddle produces golden pancakes with small bubbles on the surface, flipped once to finish cooking. These pancakes can be kept warm in the oven while preparing the full batch.

Description

The Sparkling Water Pancakes recipe balances flour, sugar, baking powder, baking soda, and salt as dry ingredients with buttermilk and sparkling water in the wet mix. The sparkling water maintains its carbonation until mixed, which helps the pancakes achieve a delicate texture and lift during cooking. Butter and vanilla add flavor and richness to the batter.

Cooking on a non-stick griddle, batter is poured in sized amounts and cooked until bubbles appear on the surface and the undersides are golden brown, then flipped gently to finish. These pancakes emerge with a slight crisp exterior and a soft interior. Keeping cooked pancakes on a warm baking sheet in a low oven helps maintain temperature and texture until serving.

The recipe includes a homemade buttermilk substitute made by curdling milk with vinegar or lemon juice. This adds acidity that reacts with baking soda for the rise. Sparkling water is kept cold and unopened until used to preserve its bubbles.

Ingredients

Servings
  • 2 cup flour
  • 3 tablespoon sugar
  • 1 1/4 teaspoon baking powder
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cup buttermilk To make one cup of buttermilk, place 1 tablespoon vinegar or lemon juice in a measuring cup, then top off the remainder with milk. Mix and leave 5 minutes until curdled
  • 2 egg
  • 3 tablespoon butter melted
  • 1 teaspoon vanilla
  • 1/2 cup carbonated water keep closed until using so it doesn't go flat, cold

Instructions

  1. Whisk together all your dry ingredients and set aside.
  2. In a separate bowl, whisk together wet ingredients until well combined, then pour into dry ingredients and mix until just combined.
  3. Heat a non-stick griddle or skillet over medium heat, and melt a little butter on it or spray some non-stick spray.
  4. When pan is hot, pour some batter on top (1/4-1/2 cup depending how big you like your pancakes), and cook until bubbles form on the surface of the batter and underside is golden brown, around 2-3 minutes. Flip and repeat on the other side.

Notes

  • Keep sparkling water cold and unopened until adding to batter to retain carbonation for fluffier pancakes.
  • To keep pancakes warm, place cooked pancakes on a baking sheet in a 100°C (200°F) oven until serving.
  • Buttermilk can be made by mixing 1 tablespoon vinegar or lemon juice with milk and letting it curdle for 5 minutes.
