Description

The Special Burger Sauce is a simple combination of creamy mayo and tangy yellow mustard mixed with finely chopped sweet gherkin pickles and their juice for a sweet-pickled crunch. Sugar adds a mild sweetness complemented by the sharpness of white wine vinegar. Paprika, garlic granules, and onion powder provide subtle aromatic warmth and depth. Stirred until smooth, it has a thick, spreadable consistency.

  • 3/4 cup mayonnaise Note 1, whole egg
  • 1 tbsp yellow mustard Note 2, American
  • 2 tbsp gherkin pickles Note 3, sweet, finely chopped
  • 2 tsp gherkin juice (from the pickle jar) (Note 4)
  • 2 tsp white sugar
  • 1/2 tsp white wine vinegar (Note 5)
  • 1/2 tsp paprika
  • 1/2 tsp garlic granules (or 1/4 tsp garlic powder)
  • 1/2 tsp onion powder

Instructions

  1. Combine all ingredients in a small bowl or jug and stir until smooth.
  2. Use for burgers - browse my Burger collection or try the latest and greatest Cheeseburger! I generously slather on the base bun as well as the lid (or drizzle the stack).

Notes

  • Use whole egg mayonnaise for a smoother, more rounded flavor, though ordinary mayo or kewpie also work well.
  • American yellow mustard is preferred; avoid hot English mustard unless you want added spiciness.
  • Sweet gherkins provide mild sweetness; regular gherkins can substitute.
  • Pickle juice is from the pickle jar and adds moisture and tang; substituting with other vinegars is possible but apple cider vinegar is preferred.
  • The sauce will keep for the mayonnaise's shelf life when stored properly.
