Description
The Special Sauce combines light mayonnaise, sugar-free ketchup, plain Greek yogurt, and milk to create a creamy base with balanced acidity and moisture. Finely diced dill pickles and white onions add texture and sharpness, while yellow mustard contributes tang and mild heat. Seasonings of smoked paprika, garlic powder, onion powder, salt, and a touch of stevia for sweetness round out the flavor profile.
Blending the ingredients in a food processor or blender achieves a smooth, uniform sauce. Refrigerating at least an hour before serving melds the flavors effectively. The sauce keeps well in an airtight container refrigerated up to a week, making it practical for preparation ahead.
A dairy-free variation can be made by substituting dairy-free yogurt or omitting it and adding additional mayonnaise. The milk quantity can be adjusted to thin the sauce as desired.
Ingredients
- 1/2 cup mayonnaise light
- 1/4 cup ketchup sugar-free, 60g
- 1/4 cup plain Greek yogurt 60g
- 1/4 cup milk add more milk for a thinner sauce, of choice, 60g
- 1/4 cup dill pickles finely diced, 45g
- 1/4 cup white onion finely diced, 35g
- 2 Tbsp yellow mustard 30g
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp stevia or 2 tsp sugar, more to taste, liquid form
Instructions
- Add all ingredients to a small food processor or blender and pulse/blend to combine. Taste and add more sugar, salt or seasoning to taste. Add more milk for a thinner consistency.
- Refrigerate for at least an hour before serving. Best when refrigerated for 24 hours. Keep stored in an airtight container in the fridge for up to a week.
Notes
- For dairy-free version, substitute plain Greek yogurt with a dairy-free yogurt or omit it and increase the mayonnaise by ¼ cup.
- The sauce should be refrigerated for at least one hour to allow flavors to blend fully, and it keeps well for up to one week in an airtight container.
- Adjust milk quantity to reach desired sauce thickness.
