Description

The preparation involves gently warming a syrup made from maple syrup, water, vegetable oil, vanilla extract, and salt, then mixing it thoroughly with rolled oats, ground spices, and diced peeled apple to distribute the flavors evenly. The mixture is spread thinly on baking trays in a low-temperature oven to allow the oats to dry and toast without burning, initially baking for twenty minutes.

After the first baking phase, slivered almonds are stirred in and the granola returns to the oven for another twenty minutes, allowing the nuts to toast and the mixture to crisp further. Once cooled, dried fruit can be added, if desired, to finish the granola. The result is a granola with a balanced texture of crunchy nuts and softened apple pieces, carrying warm, autumnal spice notes.

For the syrup

  • 4 tbsp maple syrup
  • 1 tbsp water
  • 2 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

For the oats

  • 2 1/2 cups rolled oats old-fashioned; 180g
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/8 tsp cloves ground
  • 1 apple they need to be a tiny bit smaller than 1 cm cubed, or they won't dry properly, peeled and diced
  • 6 tbsp almonds slivered
  • 4 tbsp dried fruit optional

Instructions

  1. Mix syrup ingredients together in a pot and warm gently on the cooker until combined.
  2. Stir the spices and apple into the oats.
  3. Heat the oven to fan assisted 120C / 140C / 275F / gas 1.
  4. Add the syrup to the oat mix and combine thoroughly.
  5. Spread mixture in a thin layer onto a baking tray (you might need two trays) and bake for 20 mins.
  6. Then add in the nuts, mix again and bake for another 20 mins.
  7. Remove from the oven and allow to cool.
  8. Stir in fruits if you are using and serve.
  9. Store in an airtight container for up to 2 weeks.

  • Use old-fashioned rolled oats, not quick-cook variety, for best texture.
  • Cut the apple into pieces smaller than 1 cm cubes so they dry properly during baking.
  • Choose sweeter apple varieties if you prefer a sweeter granola.
  • The granola is mildly sweet; to increase sweetness, double the syrup amount.
  • Cook at the recommended temperature to avoid burning and ensure proper drying.
