  • 4 oz Cheese Log *see Notes
  • 1 Tablespoon black pepper see Notes½, ground
  • 1 Teaspoon Pink Peppercorn
  • 1 Teaspoon green pepper or White Pepper
  • ¼ Teaspoon salt
  • ½ Teaspoon red chili pepper flakes (optional)

Instructions

  1. Place black pepper, green or white pepper, pink pepper, salt, and crushed chili pepper in a bowl.
  2. Grind spices course or finely with a mortar and pestle or a kitchen machine. A coffee bean grinder can do that too.
  3. Spread ground mixed spices over a clean straight surface.
  4. Roll cheese log in the spices so that the½ cheese is completely covered with a coat of spices.
  5. Serve up room temperature.

  • You can use either a goat cheese log or cream cheese log; shape cream cheese into a log by rolling it between cling film if needed.
  • Ensure the cheese is not too sticky when rolling in spices for an even coat.
  • Use at least two kinds of pepper in your spice mix to achieve a balanced flavor.
  • The total quantity of mixed spices should be about 3 ½ teaspoons in total.
