Spiced Fish: Cod with Sweet Potato Mash

Spiced Fish: Cod with Sweet Potato Mash combines tender cod fillets rubbed with garam masala and seared in butter, complemented by a creamy mash of sweet potatoes sweetened with maple syrup. A raisin sauce made from red wine and maple syrup finishes the dish with a touch of sweetness and complexity. This recipe balances warm spices, sweet and savory flavors, and contrasting textures for an elegant meal.

Description

This recipe features cod fillets seasoned with garam masala and salt, then cooked in butter to develop flavor and a gentle crust while keeping the fish tender. The sweet potato mash is prepared by boiling diced sweet potatoes until soft, then mashed with butter, milk, and maple syrup to create a smooth, mildly sweet base. The raisin sauce is made by soaking raisins, blending them with red wine and maple syrup, then simmering until thickened for a rich, fruity complement to the fish.

The combination offers savory fish with warmth from spices, a subtly sweet creamy mash, and a fruity, wine-based sauce that adds depth. The textures range from flaky fish, creamy mash, to the smooth sauce.

This dish can be served as a composed plate for lunch or dinner, pairing well with simple vegetables or a fresh salad to balance richness.

The recipe allows for variations in cooking the sweet potatoes, including a slower simmer method to intensify creaminess and sweetness. The raisin sauce can be served blended or as is. Dry red wine is recommended for the sauce's flavor, but adjustments can be made based on preference.

Ingredients

Servings

Sweet Potato Mash:

  • 2 sweet potato
  • 1 tablespoon butter
  • 1 ounce milk whole
  • 1 tablespoon maple syrup
  • ½ teaspoon salt

Raisin Sauce:

  • ¼ cup raisins
  • ½ cup red wine dry
  • 1 tablespoon maple syrup

Cod:

  • 8 ounces cod about 2 fillets
  • 1 tablespoon butter
  • 1 teaspoon garam masala
  • sea salt pinch

Instructions

  1. Preheat oven to 400°F.

Make the Sweet Potato Mash and Raisin Sauce:

  1. Peel and roughly dice sweet potatoes.  Add to a medium pot, and cover with water.  Bring water to a boil, and reduce to simmer.  Cook until potatoes are tender (about 10 minutes).
  2. Drain potatoes, and mash with a fork.  Add butter, milk, and maple syrup, and mash to incorporate.  Salt to taste.

Raisin Sauce:

  1. If using a Standard Blender or Food Processor: Place raisins in a heat-proof bowl, and pour boiling water over them until they're covered.  Soak for 5-10 minutes, and drain the water. If using a High-Performance Blender (such as a Vitamix):  You can skip this step.
  2. Purée the raisins, wine and maple syrup in a blender. Add to a small saucepan, and bring to a boil. Reduce heat to medium, and simmer 3-4 minutes. Remove from heat, and cover to keep warm.

Pan-Roasting Cod:

  1. Pat cod dry, and sprinkle with salt.  Rub garam masala onto the fish.Heat butter in an oven-safe pan (such as a cast iron pan) over medium-high heat.Add cod to pan, and cook 4 minutes.  Move the entire pan into the oven, and roast 5 minutes per 1 inch thickness, until the cod is no longer translucent.
  2. Serve cod over a bed of the sweet potato mash, with raisin sauce on the side.  Garnish with diced green onion if desired.

Notes

  • Simmer sweet potatoes gently in cold water for a creamier, sweeter mash at the cost of longer cooking time.
  • The raisin sauce is optional to blend but creates a smoother, visually appealing finish.
  • If no blender is available, the sauce can be served unblended.
