Description

Carrots are peeled and sliced into diagonal coins about 1/8 to 1/4 inch thick for even roasting. They are tossed with maple syrup and vegan butter (or melted oil) to introduce sweetness and fat for caramelization. A spice blend of cayenne pepper, black pepper, garam masala, and salt is sprinkled over the carrots, lending warmth and gentle heat. This combination complements the natural sweetness of the carrots.

Baked in a moderately spaced layer at 400°F, the carrots roast first uncovered for 20 minutes to develop some toasty edges. After stirring, they are covered with parchment paper and baked an additional 15 to 20 minutes to ensure tender doneness. The carrots finish with fresh herbs for brightness and optional additional pepper seasoning.

  • 16 ounces carrot sliced into 1/8” to 1/4” thick diagonal slices
  • 2 tablespoons maple syrup
  • 2 teaspoons vegan butter or oil, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper or more, to taste
  • 1/4 teaspoon garam masala
  • cilantro or basil or other fresh herbs for garnish

Instructions

  1. Preheat the oven to 400° F (205° C).
  2. Peel and slice the carrots, if you haven't already. I like to slice them into nice, diagonal coins, which are about 1/8” or a little bit more thick.
  3. Add the carrots to a baking dish, use a size where the carrots fill about 2 layer deep. Single layer would dry out too much and too thick layers will not get any toasty edges. Add the maple syrup and vegan butter or oil, and toss well to coat.
  4. Mix all of the spices in a small bowl, and sprinkle them all over the carrots. If you’d like to add more flavor to the carrots, you can add in a bit more garam masala. You can also add in some fresh herbs with the carrots, like fresh cilantro or basil. Toss well, and bake the carrots for 20 minutes.
  5. Stir the carrots, cover the baking dish with parchment paper, and continue to bake for another 15 to 20 minutes, or until the carrots are tender to preference. Garnish with some fresh herbs or black pepper, and serve.
