Spiced Pork and Peach Kabobs
Description
Spiced Pork and Peach Kabobs feature bite-sized pieces of pork tenderloin alternated with juicy peach slices on skewers, brushed with a flavorful blend of chipotle peppers in adobo, citrus juices, and mango grill sauce. The sauce mixture provides a balance of smoky heat and fruity sweetness.
Grilling the kabobs over medium-high heat allows the pork to develop a slight char and caramelization, while keeping the meat juicy and tender. The peaches soften but retain some texture, complementing the pork. Optional red onion pieces add a mild tang. The kabobs are finished with a drizzle of the reserved sauce and fresh cilantro garnish.
This dish is suitable as a main course served alongside simple sides or as an appetizer. The marinade and sauce give a distinctive smoky and fruity flavor profile that can be adjusted by substituting other stone fruits when peaches are out of season. Bamboo skewers are soaked beforehand to prevent burning during grilling.
For convenience, the sauce can be prepared up to a week ahead and the kabobs threaded up to four hours before cooking. If chipotle mango marinade products are unavailable, equivalent seasonings can be used to replicate the flavor. Soaking the skewers properly is important for safe grilling.
