Spiced Pork and Peach Kabobs feature bite-sized pieces of pork tenderloin alternated with juicy peach slices on skewers, brushed with a flavorful blend of chipotle peppers in adobo, citrus juices, and mango grill sauce. The sauce mixture provides a balance of smoky heat and fruity sweetness.

Grilling the kabobs over medium-high heat allows the pork to develop a slight char and caramelization, while keeping the meat juicy and tender. The peaches soften but retain some texture, complementing the pork. Optional red onion pieces add a mild tang. The kabobs are finished with a drizzle of the reserved sauce and fresh cilantro garnish.

  • 2 chipotle peppers in adobo sauce plus 1 tablespoon sauce, canned
  • 1 orange juiced
  • 1 lemon juiced
  • ¼ cup mango grill sauce Tastefully Simple brand
  • 1 teaspoon garlic Tastefully Simple brand
  • 1 teaspoon onion Tastefully Simple brand
  • 1/2 teaspoon kosher salt
  • 1 1/2 pounds pork tenderloin cut into 1-inch pieces
  • 3 peaches sliced
  • 1/4 red onion pieces (optional)
  • cilantro leaves optional, for garnish

Instructions

  1. Soak bamboo skewers in water for thirty minutes.
  2. Preheat grill to medium-high.
  3. Place chipotles, adobo sauce, orange juice, lemon juice, and mango sauce, in a blender and puree.
  4. Separate the sauce in half in two different bowls.
  5. Alternatively thread pork and peach slices onto skewers. Brush sauce onto pork and peaches.
  6. Sprinkle seasonings over kabobs.
  7. Grill skewers on one side until pork releases easily from the grate, about 3 to 4 minutes. Flip skewers and continue to grill for 2 to 3 minutes more.
  8. Brush or drizzle with reserved sauce.
  9. Garnish with cilantro and serve.

Notes

  • Soak bamboo or wooden skewers in water for 30 minutes before grilling to prevent burning; this step is not needed for metal skewers.
  • The chipotle mango sauce can be prepared and stored in the refrigerator for up to one week in advance.
