Spiced Pumpkin Seeds

Spiced Pumpkin Seeds are oven-roasted seeds tossed in olive oil and a blend of chili powder, cumin, salt, and optional cayenne pepper for a warm, slightly spicy snack. The roasting process crisps the seeds and brings out their nutty flavor, while the spice mix adds aromatic heat without overwhelming. These seeds can be enjoyed on their own or used as a crunchy topping.

Description

This recipe involves coating raw, hulled or unhulled pumpkin seeds with olive oil and a seasoning mix consisting of chili powder, ground cumin, salt, and an optional pinch of cayenne pepper. The seeds are spread evenly on a parchment-lined baking sheet greased lightly with oil to prevent sticking. Baking at 350°F for 20 to 25 minutes with occasional stirring allows the seeds to toast evenly until lightly browned and fragrant. During roasting, the seeds may pop, which is normal.

The finished spiced pumpkin seeds offer a crunchy texture and a balance of smoky chili and earthy cumin flavors with a touch of heat from cayenne if included. They can be eaten as a snack or added to salads and dishes for texture contrast.

Ingredients

Servings
  • 1 cup pumpkin seeds raw, hulled or unhulled
  • 1 teaspoon olive oil plus more for the baking sheet, or mild vegetable oil
  • 2 teaspoons chili powder any variety
  • 1/2 teaspoon cumin ground
  • 1/2 teaspoon salt plus more to taste, sea salt
  • Pinch cayenne pepper optional

Instructions

  1. Preheat the oven to 350°F (177°C). Line a rimmed baking sheet with a sheet of parchment paper and slick it with olive oil.
  2. In a bowl, combine the pumpkin seeds, oil, chili powder, cumin, salt, and cayenne pepper if using, and mix well.
  3. Spread the seeds in a single layer on the baking sheet and roast for 20 to 25 minutes, stirring occasionally, until aromatic and golden brown at the edges.☞ TESTER TIP: The seeds may start to make a popping sound after a few minutes in the oven. Don't be alarmed!
  4. Immediately slide the sheet of parchment and the pumpkin seeds off the baking sheet to cool. Taste, and add more salt, if needed. If you have any leftover spiced pumpkin seeds, store in an airtight container.
