Description

Spiced Tea (Russian Tea) starts by steeping black tea bags or loose tea in boiling water to develop a strong base. Separately, a syrup is made by boiling sugar with whole cloves and a cinnamon stick, infusing the syrup with warm spices. After straining out the spices, fresh strained orange and lemon juices are added to this syrup for bright, tangy notes.

The brewed tea is then combined with the spiced citrus syrup and served hot in punch or teacups. The resulting beverage has a sweet and spiced flavor that balances the astringency of black tea with citrus brightness and warming cloves and cinnamon.

Ingredients

  • 8 tea bags black tea (or 8 teaspoons loose black tea, small
  • 4 cups water boiling
  • ½ cup water
  • ¾ cup sugar
  • 6 clove whole
  • 1 cinnamon stick
  • ¼ cup orange juice strained, fresh
  • ½ cup lemon juice strained, fresh

Instructions

  1. Place the tea bags or loose tea in a heat proof measuring cup or other container.
  2. Pour the 4 cups of boiling water over the tea bags and let steep while preparing the rest of the recipe.
  3. In a medium saucepan, prepare an infusion by bringing 1/2 cup water, sugar, cloves and cinnamon stick to a boil.
  4. Boil for one minute.
  5. Remove cloves and cinnamon.
  6. Add the orange juice and lemon juice into the spiced infusion. Stir well to combine.
  7. Remove the tea bags (or strain the loose tea) and combine with the spiced infusion and juice.
  8. Serve warm in punch cups or teacups.

Notes

  • Use loose black tea if available for better flavor; small black tea bags are an acceptable alternative.
  • Freshly squeezed and strained orange and lemon juice provide the best citrus taste.
  • Use whole cloves and cinnamon sticks for the spiced infusion instead of ground spices to avoid bitterness and achieve a cleaner flavor.
