Spicy Avocado Deviled Eggs Recipe

Ingredients

  • 6 hard-boiled eggs peeled and halved
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1 small jalapeño seeds removed and finely chopped
  • 2 tablespoons red onion finely diced
  • 1 tablespoon fresh cilantro chopped
  • salt and pepper to taste
  • Paprika for garnish

Instructions

Cook Hard-Boiled Eggs

  1. Cook the eggs to your preferred method; stovetop, air fryer, oven cooked, slow cooked, or in an Instant Pot.

Prepare Hard-Boiled Eggs

  1. Cut the hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a small mixing bowl and set the egg whites aside on a serving plate.
  2. In the same bowl with the egg yolks, add the ripe avocado, mayonnaise, fresh lime juice, Dijon mustard, chopped jalapeño, red onion, and cilantro.
  3. Mix until well combined. Season with salt and pepper to taste.
  4. Spoon or pipe the avocado mixture into the hollowed egg whites, creating a slight mound.
  5. Garnish each deviled egg with a sprinkle of paprika, and any additional garnishes; sliced or diced jalapenos, and chipped cilantro on top of each deviled egg for a finishing touch.
  6. Refrigerate the eggs for 30 minutes before serving.

Notes

  • Don't skip the lime juice.  The limes are a natural preservative, which can help keep the avocados from browning too fast. 
  • To make the deviled filling a day in advance, mix the egg yolks, mayonnaise, dijon mustard, jalapenos, and onion.  Thirty minutes before filling the egg whites mash in the avocado with the lime juice and chopped cilantro. 
  • For a large batch (24 servings), you will want to prepare 12 hard-boiled eggs and double the recipe ingredients.
