Spicy Bacon Wrapped Firecracker Shrimp

Spicy Bacon Wrapped Firecracker Shrimp features large shrimp seasoned with Cajun spices, wrapped in bacon, then grilled until the bacon crisps and the shrimp cooks through. A final basting or dipping with hot sauce provides extra heat and flavor. This appetizer offers a combination of smoky, spicy, and savory flavors and a contrast of tender shrimp with crispy bacon.

Description

This recipe begins by peeling large shrimp and patting them dry before applying Cajun seasoning liberally for a spicy kick. Each shrimp is wrapped tightly with a slice of bacon, secured with a toothpick if needed, and skewered for easy grilling. Cooking over indirect heat at around 375°F allows the bacon to crisp evenly without burning while the shrimp cooks gently. Flipping regularly ensures even doneness and prevents flare-ups.

After grilling until the bacon crisps to the preferred texture and the shrimp is cooked through, the shrimp are basted or dipped in the chosen hot sauce, then returned briefly to the grill to set the sauce. The result balances the smoky bacon, spicy shrimp, and tangy sauce. This dish is served warm and works well as a finger food or party appetizer.
