Description
This dressing starts with roasted and salted cashews blended alongside cilantro, lime juice, soy sauce, rice wine vinegar, maple syrup, minced ginger, garlic, and Sriracha for spicy depth. The combination creates a creamy base with balanced acidity and sweetness. Adding neutral oil improves texture and mouthfeel, and water is incorporated gradually to reach the desired consistency, which can range from a thick sauce to a pourable dressing.
The flavor profile is rich and nutty with herbaceous brightness from cilantro and a mild heat from Sriracha, complemented by citrus tang from lime juice and a touch of sweetness from maple syrup. It can be prepared a few days in advance and stored in the refrigerator. The dressing thickens when chilled, so stirring in additional water before use restores the preferred consistency. Leftovers keep well refrigerated up to about a week, but freezing is not recommended due to texture changes.
Ingredients
- ¾ cup cashews roasted and salted
- ¼ cup cilantro loosely packed
- 1 Tbsp. lime juice
- 1 ½ Tbsp. soy sauce or Tamari
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. pure maple syrup
- ½ tsp. ginger minced or paste
- 1 garlic finely minced, clove
- ½ - 1 tsp. Sriracha sauce depending on desired spice level
- ¼ cup neutral cooking oil avocado or olive, generic cooking oil
- 3-4 Tbsp. water depending on desired consistency
- Pinch salt
Instructions
- Add all ingredients except for the water to a 3-4 cup food processor. Pulse a couple of times to begin breaking down the cashews and then blend for 1-2 minutes, or until combined. It’s ok if the cashews are not completely broken down and there are still some small chunks visible.
- Pour in the water one tablespoon at a time, blending after each addition, until your desired consistency is reached.
Notes
- One serving of this dressing is approximately 2 tablespoons.
- The dressing thickens when refrigerated; add water a teaspoon at a time to thin before serving.
- Prepare up to two days in advance and store in the refrigerator to allow flavors to meld.
- Keep leftovers in an airtight container in the fridge for up to 5 to 6 days; freezing is not advised because of texture changes.
