Ingredients

  • 4 oz cheddar cheese sharp yellow, hand grated
  • 4 oz pepper jack cheese hand grated
  • ½ Cup mayonnaise Dukes brand
  • ¼ cup jalapeño fresh or pickled!, chopped
  • ¼ cup banana pepper fresh or pickled!, chopped
  • 3 green onion chopped, using both white and green parts, stalks
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon black pepper ground
  • ½ teaspoon sugar granulated white
  • hot sauce Texas Pete's, Cholulus, etc. will do for a substitute, ½ teaspoon, Sriracha preferred or Franks

Instructions

  1. Gently mix all of these together and allow to sit in the fridge for at least an hour to allow the ingredients flavor to meld.

Notes

  • Always shred your own cheese - pre-shredded varieties contain anti-caking agents that affect the texture.
  • Use room-temperature cheese for the smoothest blending and best consistency.
  • Refrigerate for two hours before serving to let flavors develop.
  • Add extra mayo one tablespoon at a time if the spread doesn't mix together well.
  • Store in an airtight container and use clean utensils when serving.
