Spicy Chicken Meatballs

Spicy Chicken Meatballs are bite-sized ground chicken spheres seasoned with a blend of garlic, chili powder, cumin, paprika, red pepper flakes, and salt, then baked to a tender, flavorful finish. Brushed with a honey and apple cider vinegar glaze partway through baking, the meatballs develop a sweet and tangy coating. Paired with a buffalo ranch dipping sauce combining ranch dressing, buffalo wing sauce, and honey, this recipe offers a balanced spicy, savory, and sweet appetizer or snack.

Description

The meatballs are formed from ground chicken mixed thoroughly with dry spices including garlic powder, chili powder, cumin, paprika, salt, and crushed red pepper flakes to provide a blend of heat and warming flavors. Baking at 400°F on a prepared foil-lined sheet ensures even cooking and easy cleanup, with the option of elevating the meatballs on a wire rack for airflow. After an initial 15-minute bake, the meatballs receive a glaze of honey and apple cider vinegar, which caramelizes during an additional 10 to 15 minutes cooking, adding moisture and a glossy finish.

The accompanying dipping sauce mixes ranch dressing with buffalo wing sauce and honey to create a creamy, spicy, and slightly sweet complement. This sauce enhances the meatballs with cool and hot flavor notes making for a more complex experience. Using a cookie scoop helps shape uniform meatballs that cook evenly.

The meatballs are suitable as a party appetizer, snack, or part of a casual dinner. Their balance of spice, sweetness, and creamy sauce makes them appealing for varied palates. Nutritional information is calculated per meatball plus teaspoon of sauce to assist portion control.

Ingredients

Servings

Chicken Meatballs

  • 1 pound ground chicken
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon red pepper flakes crushed
  • 3 tablespoons honey
  • 1 teaspoon apple cider vinegar

Buffalo Ranch Dipping Sauce

  • ¼ cup ranch dressing
  • 2 tablespoons buffalo wing sauce (like Moore's or Frank's)
  • 2 tablespoons honey

Instructions

Meatballs

  1. Preheat your oven to 400 degrees F and line a baking sheet with heavy-duty foil. (I recommend using a wire baking rack on top of the foil if you have one.) Spray the baking rack or foil with cooking spray.
  2. In a large bowl, combine the ground chicken, garlic powder, chili powder, cumin, paprika, salt, and red pepper flakes. Mix well until all the seasonings are evenly incorporated into the chicken.
  3. Form the chicken mixture into balls and place them in a single layer on the prepared baking sheet. Continue making meatballs until all the chicken mixture is used.
  4. Bake the meatballs for 15 minutes. While the meatballs are baking, add the honey and cider vinegar to a small bowl and mix well.
  5. After 15 minutes, brush the honey mixture onto each meatball, coating them generously until all of the glaze has been used. Place the meatballs back in the oven for another 10-15 minutes until the chicken is cooked through.

Dipping Sauce

  1. Combine the ranch dressing, buffalo sauce, and honey. Mix well and refrigerate until ready to use.
  2. Remove the meatballs from the oven and transfer to a serving platter. Serve with the bowl dipping sauce and enjoy!

Notes

  • Using a cookie scoop ensures uniformly sized meatballs that bake evenly and speed up portioning.
  • The honey and apple cider vinegar glaze added midway provides a glossy, flavorful coating and helps retain moisture.
  • Each serving includes one meatball paired with one teaspoon of dipping sauce for portion guidance.
