Spicy Cilantro Lime Slaw
Description
The slaw starts with a base of coleslaw mix, which brings a crunchy texture and mild cabbage flavor. The dressing is prepared by blending plain Greek yogurt, mayonnaise, fresh cilantro leaves, green onions, garlic, fresh jalapeño, lime zest and juice, ground cumin, kosher salt, black pepper, and roasted pumpkin seeds to incorporate creaminess, spice, and citrus freshness. Tossing this dressing with the vegetables creates a balanced salad with creamy, tangy, and spicy elements complemented by a crunch from the seeds.
This slaw can be served immediately for freshness or refrigerated for up to 24 hours to allow the flavors to develop further. It can be a side dish or topping for sandwiches and tacos where a spicy, bright salad is desired.
Substitutions like roasted sunflower seeds can be used for similar texture and flavor. Store-bought coleslaw mixes may be used for convenience, or shred fresh cabbage and carrot if preferred. A hand blender or food processor can be employed to prepare the dressing efficiently.
Ingredients
- 8 cups coleslaw mix (See Note 1)
- 3/4 cup yogurt plain, Greek
- 1/2 cup mayonnaise
- 1/2 cup cilantro packed, fresh leaves
- 3 green onions cut in thirds
- 2 garlic cloves
- 2 lime zested and juiced (See Note 2
- 1 jalapeño or serrano chile, stem removed
- 1/2 tsp cumin ground
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp roasted pumpkin seeds (See Note 3)
Instructions
- Combine the yogurt, mayonnaise, cilantro, green onions, garlic, 1/4 cup lime juice plus zest, jalapeño, cumin, salt, black pepper and pumpkin seeds in a food processor or blender. Pulse a few times until the mixture is blended (See Note 4).
- Place the cole slaw mix in a large salad bowl. Pour the dressing over the cole slaw, tossing until the mixture is thoroughly combined. Season with extra salt and or pepper if needed.
- Serve immediately, or cover and refrigerate for up to 24 hours.
Notes
- Roasted sunflower seeds can replace pumpkin seeds for similar texture and taste.
- Pre-packaged coleslaw mix can be used for convenience; or shred fresh cabbage and carrot yourself.
- Use at least two limes to yield 1/4 cup lime juice and half a lime for zest.
- A stick blender or food processor works well for blending the dressing.
