Spicy Crab and Sausage Soup

Spicy Crab and Sausage Soup is a quick, easy and flavorful appetizer or dinner recipes. Full of vegetables, sausage and crab, it is soul warming and super easy.

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1 yellow onion chopped, medium
  • 1 bunch scallions whites and greens, chopped
  • 4 links sausage casings removed, thinly sliced
  • 30 ounces diced tomatoes canned, petite
  • 2 cups chicken broth
  • 1 tablespoon Seafood Seasoning such as Old Bay
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper finely ground
  • 1/4 teaspoon smoked paprika
  • pinch cayenne pepper
  • 4 cups vegetables frozen
  • 1 pound blue crab meat body and claw, picked over for shells

Instructions

  1. In a Dutch oven or large enamel pot, heat extra virgin olive oil. Add chopped yellow onion and scallions, soften for 2-3 minutes.
  2. Add cut sausage, cooking for 8-10 minutes or.
  3. Stir in canned diced tomatoes, liquid included, and chicken broth. Bring to a low simmer for 10 minutes.
  4. Add seafood seasoning, black pepper, smoked paprika, garlic powder, cayenne and frozen vegetables. Cook until it comes back to a low simmer. Frozen veggies are like adding ice cubes. They will be hot when liquid resumes simmering, about 5 minutes.
  5. Right before serving, add blue crab meat. Top with garnishes as desired.
