Spicy Creamy Chicken
Description
This recipe uses diced boneless, skinless chicken breasts browned with chopped onions and seasoned with Italian seasoning, salt, pepper, and cayenne pepper to add mild heat. Butter and heavy whipping cream are added to create a rich base that simmers until the chicken is cooked through. Grated Parmesan cheese is gradually stirred in off heat, melting to thicken and enrich the sauce. Cooked ziti pasta is folded in last, allowing the pasta to absorb the creamy, subtly spicy sauce.
The final dish offers a moderately spicy, creamy texture with the parmesan contributing a savory depth. The cooking technique of simmering lets the flavors meld without overpowering the tender chicken.
This pasta can be served with an optional sprinkle of extra Parmesan or red pepper flakes for more heat. Leftovers store well refrigerated for up to five days.
Ingredients
- 3 chicken breast diced into 1 inch pieces, boneless skinless
- 1/2 onion chopped
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 6 Tbsp butter
- 2 cups heavy whipping cream
- 2 cups Parmesan Cheese grated
- 16 oz ziti pasta
Instructions
- In a large skillet heat about a tablespoon of the butter.
- Add chicken and the onions and allow it to brown, stirring occasionally. Let it get nice and brown and cook until the onions are soft.
- While chicken is browning season it with salt and pepper. Add the Italian seasoning and the cayenne pepper.
- Then mix in the remaining butter and heavy whipping cream.
- Bring the mixture to a boil.
- Cover, reduce the heat to low and simmer for approximately 10 minutes until the chicken is cooked through.
- While the chicken is cooking, cook the ziti to al dente based on the package instructions.
- Remove the chicken mixture from the heat. Then stir in the grated parmesan cheese gradually until the cheese is melted and all mixed in.
- Then stir in the cooked ziti. Serve warm and top with additional parmesan cheese. Enjoy!
Notes
- This dish has a mild level of spice; add extra red pepper flakes on top if more heat is desired.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
