- Combine the spice mix ingredients in a bowl.
- Mix the 3 pounds of ground beef with the spice mix and the Worcestershire Sauce, and mix to evenly combine.
- Heat your griddle over high heat (500 degrees).
- Combine the sliced onion and sliced jalapenos in a bowl. Then divide into 7 equal portions.
- Form the meat into 14 equal sized balls (about 3 ounces each).
- Brush both sides of the Texas toast bread slices with some butter and brown on the griddle, about 30-60 seconds per side. Remove and set aside.
- Working in batches, cook the burgers. For each burger you will need 1 portion of onion/jalapeno mix, 2 burger balls, 1 slice of pepper jack cheese, and 1 slice of Colby Jack cheese. Note: it is best to have everything ready, because things move fast once the cooking starts.
- Place the onion portion on the grill and cook for about 30 seconds, then flip the onions over.
- Place the burger balls on the griddle, spaced apart, and smash them down as flat as you can with a heavy spatula. Cook for about 2 minutes.
