Spicy Double Smash Burger on Texas Toast

The Spicy Double Smash Burger on Texas Toast features double smashed patties seasoned with a spice mix and Worcestershire sauce, topped with a mix of sautéed onions and jalapeños, plus pepper jack and Colby jack cheeses, all served on toasted, buttered Texas toast. This combination packs a spicy, savory profile amplified by the fresh jalapeño slices and melted cheeses, assembled on thick Texas toast for a hearty burger experience.

Description

This burger recipe starts by seasoning 3 pounds of ground beef with salt, pepper, garlic powder, onion powder, smoked paprika, and Worcestershire sauce. The meat is formed into 14 small balls that get smashed thin and cooked quickly on a hot griddle. Meanwhile, thinly sliced red onions and jalapeños are mixed and cooked briefly to soften and release their flavors.

The Texas toast slices are buttered and toasted until golden on the griddle, providing a sturdy, flavorful base for the burger. Each burger is assembled on the toast with a portion of the onion and jalapeño mix, two smashed burger patties, and slices of pepper jack and Colby jack cheese. Jalapeño slices are fried and added on top for extra heat and texture.

The cooking process demands a rapid sequence once the patties hit the griddle to ensure the burgers develop a crisp crust while maintaining juiciness. The sliders offer a spicy, cheesy bite, paired well with the buttery toast, making them suitable for gatherings or casual meals where flavorful hand-held options are desired.

Ingredients

Servings

Ingredients:

  • 3 Pounds ground beef preferably 80/20
  • 14 lices Texas Toast bread thick sliced, style
  • 1 red onion thinly sliced
  • 2 jalapeños thinly sliced
  • 7 lices pepper jack cheese
  • 7 lices Colby jack cheese
  • jalapeños for topping, fried
  • 1 Tablespoon Worcestershire sauce
  • butter Softened, for buttering the bread

Burger Spice Mix for 3 Pounds of Ground Hamburger

  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika

Instructions

Instructions:

  1. Combine the spice mix ingredients in a bowl.
  2. Mix the 3 pounds of ground beef with the spice mix and the Worcestershire Sauce, and mix to evenly combine.
  3. Heat your griddle over high heat (500 degrees).
  4. Combine the sliced onion and sliced jalapenos in a bowl. Then divide into 7 equal portions.
  5. Form the meat into 14 equal sized balls (about 3 ounces each).
  6. Brush both sides of the Texas toast bread slices with some butter and brown on the griddle, about 30-60 seconds per side. Remove and set aside.
  7. Working in batches, cook the burgers. For each burger you will need 1 portion of onion/jalapeno mix, 2 burger balls, 1 slice of pepper jack cheese, and 1 slice of Colby Jack cheese. Note: it is best to have everything ready, because things move fast once the cooking starts.
  8. Place the onion portion on the grill and cook for about 30 seconds, then flip the onions over.
  9. Place the burger balls on the griddle, spaced apart, and smash them down as flat as you can with a heavy spatula. Cook for about 2 minutes.
  10. Flip one of the burger patties over and top with the pepper jack cheese. Flip the remaining patty over onto the onions and top with the Colby jack cheese. Cook for about another 1-2 minutes, until the cheese is melted.
  11. Place the 2 burger patties on top of a slice of the grilled Texas toast, top with a few fried jalapenos, any other desired burger toppings, then top with the remaining slice of Texas toast.
