Spicy Garlic Noodles

Ingredients

  • 320 grams rice noodles such as pho or rice vermicelli, dried

For The Sauce

  • 2 tablespoons butter 30 grams, 1.06 ounces
  • 1 teaspoon garlic minced
  • 1 fresh chilli deseeded, and cut into small pieces
  • 2 teaspoon fish sauce
  • 2 teaspoon oyster sauce
  • 2 teaspoons soy sauce light
  • 1 teaspoon chili flakes or to taste
  • ¼ cup water
  • salt to taste
  • black pepper to taste
  • ½ cup Parmesan Cheese finely grated
  • ¼ cup green onion finely chopped, spring onion

Instructions

  1. Cook the noodles according to packet instructions. Once cooked, strain noodles and set aside.
  2. Meanwhile, in a medium sized saucepan, heat the butter over medium heat. Add the minced garlic and chopped chili and saute for 1 to 2 minutes. Then add the fish sauce, oyster sauce, soy sauce, chili flakes, water, and salt and pepper. Stir to combine. Taste for seasoning, and adjust as desired.
  3. Add the cooked and strained noodles to the saucepan. Toss the noodles through the sauce until evenly coated. If you need to make your sauce a bit runnier, add 1 tablespoon of water at a time. Adjust seasoning as necessary.
  4. Turn off heat. Mix through the grated parmesan cheese and green onions. Serve.

Notes

  • Control the spice level of your noodles by adjusting the amount of chili peppers you use. Start with a small amount and gradually increase according to your preference. Remember, you can always add more spice, but it's challenging to tone it down once it's too spicy.
