Description
Spicy Gochujang Noodles begin with a sauce blended from gochujang paste, soy sauce, sesame oil, honey (or sugar), lime juice, and minced garlic if using. The noodles—rice, flour, egg, or ramen style—are boiled until tender, drained, and lightly tossed with oil.
Chopped chili peppers and bell peppers are stir-fried to soften them slightly, then the noodles are added and stir-fried briefly. The gochujang sauce is poured over the noodles and tossed thoroughly to coat the strands evenly with the spicy, savory, and slightly sweet flavor.
The dish is served garnished with sesame seeds, fresh scallions, and optionally a squeeze of lime or red pepper flakes for extra heat. This recipe can be adapted with vegetables or proteins added during cooking.
Ingredients
FOR THE GOCHUJANG SAUCE
- ¼ cup Korean Gochujang I am using hot gochujang
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon honey or use sugar, optional
- lime ~1 tablespoon, or more to taste, juice from half lime
- 2 cloves garlic minced (optional)
FOR THE GOCHUJANG NOODLES
- 8 ounces noodles (use rice, flour, egg, or ramen noodles)
- 1 tablespoon vegetable oil
- 1 bell pepper chopped, large
- 3-4 chili chopped, spicy
- scallion fresh chopped, for garnish

- lime
Instructions
- Whisk together the gochujang noodles sauce ingredients and set the sauce aside.
- Boil the noodles in hot water per the packaging directions until done, about 4-5 minutes. Drain and set into a lightly oiled bowl.
- Heat the oil in a wok or large pan over medium heat and add the chili peppers. Cook for 5 minutes to soften.
- Add the noodles and stir fry for 1 minute.
- Stir in the spicy noodles sauce and toss to evenly coat.
- Transfer to bowls. Garnish and serve.
Notes
- Thin the gochujang sauce with water if it is too thick to help it coat the noodles evenly.
- Add any favorite stir-fry vegetables to customize the dish.
- Include proteins like shrimp, chicken, or tofu for a more substantial meal.
