Spicy Grilled Chicken Wings
Description
This recipe starts by mixing a blend of honey, chipotle sauce, lemon juice, garlic, paprika, balsamic vinegar, olive oil, and salt to marinate chicken wings. The wings absorb these flavors during a 2 to 8-hour refrigeration. Allowing the wings to come to room temperature before grilling helps in even cooking. Grilling over medium-high heat develops a brown, slightly charred crust that locks in juices.
The wings are cooked covered for 15 minutes on one side then flipped and grilled for an additional 10 to 15 minutes, reaching an internal temperature of 165°F indicating doneness. The chipotle sauce provides a moderate spiciness balanced by the sweetness of honey and acidity of lemon and vinegar. The garlic and paprika deepen the smoky profile.
This dish pairs well with simple sides such as potato salad, tomato salad, or grilled vegetables. It is appropriate for casual meals, parties, or whenever spiced grilled wings are desired. The wings can be stored refrigerated and reheated in the oven maintaining their flavor and texture. Adjust chipotle sauce quantity to achieve preferred heat level and avoid excessive flipping while grilling to preserve skin texture and even cooking.
Planning for 6 to 8 wings per person suits most appetites, with up to 10 per person for larger eaters or teenagers.
Ingredients
- 1/3 cup honey
- 2 tbsp chipotle sauce
- 1 lemon juice of
- 4 cloves garlic minced
- 1 tsp paprika
- 3 tbsp balsamic vinegar
- 1/4 cup olive oil
- 1 1/2 tsp salt
- 2 lb chicken wings
Instructions
- In a large bowl, mix honey, chipotle sauce, lemon juice, minced garlic, paprika, balsamic vinegar, olive oil and salt.
- Add the wings to the marinade and mix well using a spatula or a pair of tongs.
- Cover and refrigerate for 2 to 8 hours.
- Once ready to grill, take the wings out of the fridge and place the bowl on the counter. Let the wings come to room temperature. Preheat the grill to medium high (about 400°).
- Place the marinated wings on the hot grill and grill covered for about 15 minutes.
- Check the wings and when they're charred and brown on one side, flip them so they cook on the other side for another 10-15 minutes.
- The wings are cooked when their internal temperature registers at 165°F on an instant-read thermometer.
Notes
- Serve wings with potato salad, tomato salad, or grilled vegetables.
- Leftover wings store well in the refrigerator up to 2 days; reheat in a 350°F oven for 15 minutes.
- Adjust chipotle sauce amount for preferred spiciness; 2 tablespoons offers moderate heat.
- Minimize flipping while grilling to get crispy skin and even cooking; flip once after about 10 minutes.
- Plan for about 6-8 wings per person; increase to 10 for hungrier guests.
