Spicy Guacamole Plantain Cups
Description
In this recipe, unripe green plantains are peeled and cut into chunks, then deep-fried until golden. The hot chunks are molded into cup shapes using a citrus squeezer or mini muffin tins and refried until crisp, creating sturdy edible cups. For the filling, ripe avocados are mashed and combined with chopped tomatoes, cilantro, diced seeded jalapeño, lime juice, and dashes of Tabasco sauce for a spicy kick. The guacamole is spooned into the plantain cups just before serving, garnished with a cilantro leaf for freshness and color.
The contrast between the crunchy, slightly salty plantain cups and the creamy, vibrant guacamole creates a satisfying texture and flavor balance. This finger food works well as a starter or appetizer at gatherings or as a snack that brings together tropical ingredients with a spicy twist.
You can prepare the plantain cups ahead of time and keep them at room temperature. To refresh, simply warm them briefly in a 375°F oven to restore their crispness before filling with guacamole.
Ingredients
For Plantain Cups
- 3 green plantain unripe
- 1 cup vegetable oil
- salt to taste
- black pepper to taste
For Spicy Guacamole
- 3 avocado ripe, from Mexico
- 2 tomato chopped
- 2 tablespoons cilantro chopped
- 1 tablespoon lime juice
- 1 jalapeño seeded and diced
- 2-3 dashes Tabasco sauce or more if you'd like
Instructions
For Plantain Cups
- Heat the oil in a deep saucepan until it reached 350 degrees F.
- Make 1-2 vertical slits on the plantain to peel it easily
- Slice it into 1 inch chunks
- Deep fry for 4-5 minutes or until golden. Remove from heat and place over paper towels to drain the excess oil
- Place the chunks one at a time in a citrus squeezer and squeeze to make the "cup" shape. Alternately, you can also place them in a mini muffin tins and use the handle of a wide wooden spoon to make the indentations in the middle
- Refry the cups again for 3-4 minutes or until crisp. Drain on paper towels and fill
For Spicy Guacamole
- Mash the Avocados using a fork. Add salt, pepper, tomatoes, cilantro, and jalapenos. Mix until combined
- Add the 1 tablespoon of lime juice and mix. If needed, add more lime juice
- Finish the guacamole by added the TABASCO® Sauce
Assembly
- Using a spoon, stuff the spicy guacamole in the cavities of the plantain cups. Garnish with a cilantro leaf and serve.
Notes
- Plantain cups can be fried in advance and stored at room temperature before serving.
- Reheat plantain cups in a 375°F oven for a few minutes to regain crispness before filling with guacamole.
