Spicy Jalapeno Cilantro Slaw
Description
Spicy Jalapeno Cilantro Slaw combines crunchy vegetables—cabbage, carrots, and onions—with the fresh herbal note of cilantro and the mild heat of jalapeño peppers. The dressing adds creaminess and tang from mayonnaise and lime juice, while cayenne pepper and honey provide a mild spicy sweetness.
The textures range from crisp vegetables to the smooth dressing, creating contrast and freshness. The slaw is well suited as a topping for pulled pork sandwiches or fish tacos, or a side for grilled or oven-baked BBQ chicken.
Preparation can be expedited using a food processor for slicing and grating. Variations include substituting sugar for honey, using vegan mayonnaise and agave for a vegan option, or omitting honey for compliance with whole30, paleo, and keto diets.
The slaw keeps well refrigerated up to two days, allowing flavors to meld further before serving.
Ingredients
For the Slaw:
- 1/2 cabbage cut julienne, head
- 3 carrot grated
- 1/2 red onion halved and thinly sliced
- 2-3 jalapeno pepper seeded and thinly sliced
- 1/2 cup cilantro chopped, fresh
For the Dressing:
- 3/4 cup mayonnaise
- lime juice about 3 tablespoons, juice of 2 limes
- 1/4 teaspoon cayenne pepper
- 2 tablespoons honey
- kosher salt to taste
- black pepper to taste
Instructions
- In a large bowl, whisk together all dressing ingredients.
- Add the cole slaw ingredients to the bowl with the dressing.
- Stir together.
- Serve immediately or after refrigerating for up to two days.
- Serving suggestion: on top of pulled pork sandwiches or fish tacos, or on the side of oven BBQ chicken.
Notes
- Use a food processor attachment to quickly julienne cabbage and grate carrots.
- Substitute sugar for honey to reduce cost.
- For a vegan slaw, choose vegan mayonnaise and replace honey with agave or sugar.
- Omit honey and use compliant mayonnaise for whole30, paleo, or keto versions.
- Refrigerate slaw for up to two days to enhance flavor melding.
