These Sweet and Spicy Chicken Wings are smothered with homemade mango chutney, then baked until tender and crispy with a perfectly caramelized skin! Try this exotic and healthy twist on traditional fried chicken!

Ingredients
For the Chicken Wings:
- 2 lb chicken wings trimmed
- 1/4 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1/3 cup mango chutney (recipe below, or your favourite brand)
- 1 jalapeño seeded and finely minced (more or less depending on how spicy you want)
- ½ lemon juiced
- 1 tablespoon honey
- 2 tablespoons soy sauce Note: if you are using low sodium soy sauce, add ¼ teaspoon of salt
- 2 tablespoons cilantro minced, fresh
- 2 tablespoons mint minced, fresh
For the Mango Chutney:
- 1 tablespoon neutral cooking oil generic cooking oil
- 2 onion finely minced, or shallots, ½ a red onion
- 1 jalapeno pepper (more or less to taste), finely minced
- 1 garlic finely minced, clove
- 3 teaspoons ginger fresh, grated
- ¼ teaspoon cumin
- ¼ teaspoon turmeric powder
- 1 Mango finely minced, about 1 cup
- 1 tablespoon light brown sugar
- 1 tablespoon white vinegar
- 1 tablespoon water
- 1/8 teaspoon salt
- 2 Tablespoon mint minced and fresh cilantro minced, fresh
