Spicy Roasted Cauliflower Over Hummus

This Spicy Roasted Cauliflower Over Hummus combines oven-roasted cauliflower florets seasoned with smoked paprika, cumin, coriander, and red pepper flakes served atop a creamy, homemade hummus made from garbanzo beans, tahini, garlic, and lemon. The dish delivers a textured contrast between the tender, caramelized cauliflower with a smoky spice finish and the smooth, tangy hummus. It is garnished with fresh herbs and lemon zest, adding brightness, and pairs well with grilled pita bread for scooping.

Description

Spicy Roasted Cauliflower Over Hummus centers around cauliflower florets roasted until caramelized and tender with a spice blend including smoked paprika, cumin, coriander, garlic, and a touch of lemon juice. The roasting brings out a sweet, smoky flavor with a mild heat from the crushed red pepper flakes. The accompanying hummus is prepared by blending canned garbanzo beans with tahini, olive oil, garlic, lemon juice, and salt to create a creamy base.

The roasted cauliflower is placed in a well in the center of the hummus, then topped with optional garnishes such as chopped parsley, mint leaves, lemon zest, and additional red pepper flakes to enhance freshness and complexity. Served with grilled pita bread, this recipe offers a balanced vegetarian dish with layers of texture and flavor, suitable as an appetizer or a light meal.

  • ½ teaspoon red pepper flakes crushed
  • 1 garlic clove, minced
  • ½ lemon juiced
  • salt to taste
  • black pepper to taste

simple hummus

  • 1 garbanzo beans reserving half the liquid, canned, drained
  • ¼ cup tahini
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove
  • 1 lemon juiced
  • salt to taste

garnish

  • parsley optional, chopped
  • mint leaves optional, chopped
  • red pepper flakes optional, crushed
  • lemon optional, zest
  • pita bread for serving, grilled

Instructions

  1. Preheat oven to 375˚F.
  2. Place cauliflower florets into a mixing bowl and toss together with oil, smoked paprika, cumin, coriander, pepper flakes, garlic, lemon juice, salt, and pepper.
  3. Transfer cauliflower onto a baking sheet and spread evenly in a single layer. Roast cauliflower for 25 to 30 minutes or until nicely caramelized and tender. Remove from oven and slightly cool.
  4. For hummus: Place garbanzo beans, plus reserved liquid, tahini, oil, garlic, lemon juice, and salt into the well of a blender and puree until desired consistency is achieved (adding water 1 to 2 tablespoons at a time, as needed). Adjust seasonings.
  5. To assemble: Pour hummus into a large bowl and make a well in the center (can easily do this with the back of a ladle). Fill hummus well with roasted cauliflower and top with more crushed red pepper flakes, lemon zest, parsley, and mint. Serve with grilled pita bread.
