Spicy Roasted Pepitas Recipe (Pumpkin Seeds)

This Spicy Roasted Pepitas recipe transforms pumpkin seeds into a savory snack coated with ancho chile powder, paprika, garlic powder, kosher salt, olive oil, and fresh lime juice. Roasting the hulled seeds brings out a toasted crunch and deepens their nutty flavor, while the spices add smoky heat. The lime juice added after roasting provides a bright, tangy finish. These pepitas make a flavorful and crunchy snack or garnish.

Description

The recipe uses hulled pumpkin seeds mixed with a blend of ancho chile powder, paprika, garlic powder, kosher salt, and olive oil, spreading them evenly on a parchment-lined baking tray. Roasting at 350°F for about 12 minutes to a light toasty brown gives the seeds a crisp texture and intensifies their natural nutty notes. Tossing halfway ensures even cooking.

The finishing drizzle of lime juice adds a fresh citrus contrast that balances the smoky, spicy seasoning. The seeds can be enjoyed on their own or used to add texture and flavor to salads or soups.

Roasted pepitas can be stored in an airtight container for up to one week, preserving their crunch for snacking or garnishes over several days.

Ingredients

Servings
  • 8 ounces pumpkin seeds hulled, aka pepitas
  • 1 teaspoon ancho chile powder
  • 1 teaspoon paprika ground
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 2 teaspoons lime juice

Instructions

  1. Preheat an oven to 350 degrees F.
  2. Add the hulled pepitas to a large bowl along the spices and drizzle with olive oil and toss.
  3. Line a large baking tray with parchment paper. Spread the pumpkin seeds out onto the tray and roast until the seeds are lightly toasted, about 12 minutes, stirring halfway through. Drizzle with lime juice and serve.

Notes

  • Store roasted pepitas in an airtight container at room temperature to maintain freshness for up to one week.
  • For best flavor, toss seeds halfway through roasting to ensure even toasting.
  • Add lime juice after roasting to preserve its bright, tangy flavor.
