Spicy Three Bean Salad

A spicy three bean salad that you can eat as a meal, a side, or a snack.

Ingredients
- 1 - 16 ounce pinto beans drained and rinsed, canned
- 1 black beans 16 ounce can, rinsed and drained
- 1 Kidney Beans 16 ounce can, rinsed and drained
- 1 red onion small, sliced into small slivers
- 1 tomato small, seeded and finely diced
- ¼ cup cilantro chopped
- 3 tablespoons giardiniera hot or mild, packed in oil
- 2 teaspoons apple cider vinegar
- lime juice from one
- 1 teaspoon cumin
- salt to taste
Instructions
- Boil (optional) the rinsed beans in water for five minutes then drain and rinse with cold water. Let the excess water drain before placing the beans in the bowl.
- Place the beans in a large bowl and add the remaining ingredients and gently fold until combined.
- Will keep for five days in an airtight container in the refrigerator.
