Spicy Three Bean Salad

Ingredients

  • 1 - 16 ounce pinto beans drained and rinsed, canned
  • 1 black beans 16 ounce can, rinsed and drained
  • 1 Kidney Beans 16 ounce can, rinsed and drained
  • 1 red onion small, sliced into small slivers
  • 1 tomato small, seeded and finely diced
  • ¼ cup cilantro chopped
  • 3 tablespoons giardiniera hot or mild, packed in oil
  • 2 teaspoons apple cider vinegar
  • lime juice from one
  • 1 teaspoon cumin
  • salt to taste

Instructions

  1. Boil (optional) the rinsed beans in water for five minutes then drain and rinse with cold water. Let the excess water drain before placing the beans in the bowl.
  2. Place the beans in a large bowl and add the remaining ingredients and gently fold until combined.
  3. Will keep for five days in an airtight container in the refrigerator.
