  • 2 Tablespoons garlic pressed
  • 1 teaspoon red pepper flakes
  • 3 Tablespoons olive oil
  • 8 ounces mushroom sliced
  • ½ cup basil sliced into shreds, fresh
  • ½ cup spinach sliced into shreds
  • 14.5 ounces diced tomatoes canned
  • 3-5 Roma tomato deseeded and diced
  • salt to taste
  • black pepper to taste

Instructions

  1. Cook pasta according to package instructions.
  2. Sauté garlic and red pepper flakes in oil on medium-high heat until almost golden.
  3. Add mushrooms and sauté for 2 to 3 minutes. Add basil and spinach, sauté for another minute or so.
  4. Add canned tomatoes, stir, and heat for about a minute. Add fresh tomatoes, stir, and heat through for about a minute. Turn the heat low until ready to serve and gently mix the pasta in the sauce.
