Spicy Tuna Avocado Towers

Spicy Tuna Avocado Towers combine diced sushi-grade ahi tuna with ripe avocado chunks, all coated in a creamy spicy mayo. The towers are built between layers of lightly fried, crispy wonton wrappers, providing a crunchy contrast to the tender fish and creamy avocado. A garnish of sesame seeds and finely sliced green onions adds texture and a subtle nutty flavor, making this dish a layered blend of fresh and fried components.

Description

Spicy Tuna Avocado Towers are constructed with small cubes of fresh ahi tuna and ripe avocado mixed gently with a spicy mayonnaise made from mayo, sriracha, lemon juice, and sesame oil. The dish features homemade crispy wonton layers that are quickly fried until golden and bubbly, then lightly salted. These fritters form the base and interlace with spoonfuls of the spicy tuna mixture to create visually appealing towers. Sesame seeds, tobiko, or thinly sliced green onions add a finishing touch for color and texture. The combination of creamy, spicy filling with crisp wonton shells provides a satisfying textural interplay.

The preparation method emphasizes careful frying to achieve light crispness without greasiness and gentle folding of ingredients to keep chunks intact. The mixture balances heat, acidity, and richness, using the sriracha and lemon juice to brighten the tuna and avocado blend. Serving these towers fresh preserves the delicate textures and flavor contrasts.

These towers can be served as appetizers or small plates, ideal for gatherings where finger foods are favored. The method to create curly wonton strips for topping introduces textural flair and visual interest, elevating the presentation.

Ingredients

Servings
  • 1 cup vegetable oil 240 mL
  • 8-16 wonton wrappers
  • 1/2 tsp kosher salt 3 g
  • 1 lb ahi tuna diced into small 1/2 inch pieces, sushi-grade
  • 2 avocado diced into 1/2 inch pieces, ripe

Spicy Mayo

  • 1/8 cup mayonnaise 30 g, preferably Kewpie brand
  • 1-2 tbsp sriracha 15-30 g, amount depends on spiciness preference
  • lemon juice of half
  • 2 tsp sesame oil 10 mL
  • sesame seeds tobiko, finely sliced green onions, for garnish

Instructions

  1. Heat vegetable oil in a medium saucepan over medium heat. Once up to 325 degrees F (160 degrees C), fry wontons, one or two at a time, for 10 seconds, then use tongs to flip the wontons over and fry for another 10 seconds, until the wontons are browned and bubbly.
  2. Place the fried wontons on a paper towel-lined plate, then sprinkle wontons with a pinch of salt. Repeat these steps until all wontons are fried.
  3. In a medium bowl, mix together the ingredients for the spicy mayo and set aside.
  4. In a large bowl, gently mix together the diced tuna and avocado. Then dollop two spoonfuls of the spicy mayo and gently mix in, adding more if desired to coat the fish and avocado to taste.

To Serve

  1. On a plate, lay a foundation layer of the wonton wrapper, then top it with the spicy tuna mixture, making that layer as even as possible so the next wonton will sit as flat as possible. Top the spicy tuna later with another wonton, then top that with more spicy tuna, and repeat until you have about 3-4 wontons used.
  2. Top the last wonton with the spicy tuna mix. Garnish with tobiko, sesame seeds, and green onions, if desired.
  3. Serve immediately, as the wontons will get soggy.

Notes

  • Cut some wonton wrappers into strips and fry until crisp to create a decorative and crunchy topping.
  • Use sushi-grade tuna diced into small cubes for the best texture and safety.
  • Adjust the amount of sriracha in the spicy mayo to control the heat level.
  • Fry wontons quickly at 325°F to maintain a light, bubbly crispness without absorbing too much oil.
  • Assemble the towers just before serving to keep the wonton wrappers crisp.
