Spicy Vodka Chicken Parmesan features chicken breasts cooked in an air fryer or oven, coated with seasoned breadcrumbs, topped with mozzarella and cherry peppers, and finished with a vodka tomato sauce. The dish combines tender chicken with spicy and creamy flavors from the sauce and peppers, baked until golden and bubbly.

Description

This recipe begins by heating a jarred vodka sauce thinned slightly with water if too thick. Chicken breasts are halved lengthwise and sprayed lightly with oil before air frying at 400°F for about 7–8 minutes to achieve a tender cooked base. The chicken is then pounded lightly to even thickness and seasoned.

The cooked chicken cutlets are spooned with the vodka sauce and layered with half the jarred hot cherry peppers. They are baked at 450°F for 20–25 minutes until the tops are golden and the chicken is cooked through. Following baking, the cutlets are dipped in beaten egg, coated with seasoned breadcrumbs, and topped with fresh slices of mozzarella and the remaining cherry peppers.

Finally, the cutlets are air fried at a lower temperature until the cheese melts and chicken finishes cooking. This results in crispy, flavorful chicken with a rich tomato-vodka sauce and spicy pepper topping, ready to serve warm.

  • ¾ cup vodka sauce (I used 365 jarred vodka sauce)
  • olive oil spray form
  • 2 ounce chicken breast halved lengthwise to make 4 (16 oz total, boneless
  • 1 teaspoon kosher salt
  • 1 large egg
  • 1 cup seasoned breadcrumbs (I like 4C)
  • 4 lices mozzarella cheese 4 ounces total, fresh
  • 1/2 cup cherry peppers hot, sliced, jarred

Instructions

  1. Heat the vodka sauce and add a little water to thin if it’s too thick.
  2. Spray both sides of the chicken with oil then air fryer 400F 7 to 8 minutes, turning halfway, in batches as needed.
  3. Place foil on a sheet pan. Preheat oven to 450F.
  4. Pound the thicker end of the chicken lightly to make thinner. Season with salt and pepper.
  5. Spoon the vodka sauce over the cutlets then top with half of the cherry peppers.
  6. Bake 20 to 25 minutes, until golden and cooked through in the center. No need to turn.
  7. Place in the egg, then into the breadcrumbs and pat well with the back of a fork.
  8. Top each cutlet with 1 ounce mozzarella, then sprinkle with remaining spicy cherry peppers. Air fry 300F until the cheese melts and the chicken is cooked through, about 1 to 2 minutes. Serve hot.
  9. Spoon the vodka sauce over the cutlets then top with half of the cherry peppers.
  10. Shake and transfer to the air fryer basket or oven. Repeat with remaining cutlets.
  11. Top each cutlet with 1 ounce mozzarella, then sprinkle with remaining spicy cherry peppers.
  12. Bake until the cheese melts and the chicken is cooked through, about 5 minutes. Serve hot.
